Green Light - twisted - dinner

here's tonights mostly green light dinner...
2 tbsp grated Parmesan Cheese
1 1/2 Tsp Italian herb seasoning
1/2 tsp each salt & pepper (which I ignored thankfully)
1 Eggplant - sliced into 1/2 inch thick slices (I had a 1/2 eggplant left)
1 cup heated low-fat pasta sauce
1/4 cup shredded part-skin mozzarella cheese
2 tbsp chopped fresh Italian parsley or basil (optional)
1. In small bowl, combine parmesan cheese, italian herb seasoning, salt & pepper. Brush slices of eggplant with 1 tbsp extra-virgin olive oil, then sprinkle with seasoning mixture
2. Grill over medium high head for 20 min or until tender. Place in shallow dish, cover with sauce and sprinkle mozzarella on top. Serve
How'd I twist it? Well, I was glad I skipped the salt (my Italian seasoning was SALTY). I don't have fresh grated parmensan and refuse to buy it until I use up the crap in a can. I replaced the healthy mozza with unhealthy Cheddar (again cause I have it on hand and am not buying the good stuff til the crap is gone). So my green light recipe probably equals at best a Yellow. OH and my grill is still in the shed so it got pan fried.
How'd Katina fair? She liked the first bite, and the 2nd. Then had to be cajoled into 3 more bites. Course she RAN with the cheddar!!!
